Chicken Teriyaki with Stir Fry Vegetables

  • 1 medium onion (cut into larger wedges)
  • 2 medium zucchini
  • 1 lb. broccoli florets
  • 3 Tbsp. vegetable oil
  • 1 Tbsp. sesame oil
  • 1 lb. chicken tenders
  • ¼ cup of teriyaki (Kikkoman brand)
  • Salt and Pepper to taste
  • Nishiki medium grain rice for steamed rice side dish
  1. Place skillet or wok on medium heat with 2 Tablespoons of vegetable oil and 1 Tablespoon of sesame oil.
  2. Add chicken tenders and cook for 20 minutes , browning on both sides, remove from skillet when done.
  3. Add remaining oil and all vegetables to skillet and cook while stirring until al dente.
  4. Add teriyaki sauce to deglaze and create your sauce. Add chicken back into your vegetables.
  5. Salt and Pepper to taste. '
  6. Steam Nishiki rice as a side dish for a wonderful meal
