No Bake Oatmeal Cookies

  • 3 Cups granulated sugar
  • ½ Cup butter (1 stick), I use Kerry Gold unsalted
  • ½ cup of whole milk
  • ⅓ cup of cocoa powder, I use Ghirardelli Cocoa powder
  • ¼ tsp. King Arthur espresso powder
  • ⅓ cup Lotus Biscoff cookie butter
  • 3 Cups Steel Cut oats
  • 1 Tbsp. vanilla extract, (I use Homemade)
  1. Combine butter, milk, sugar, cocoa powder and espresso powder into a medium saucepan and heat on medium. Stirring occasionally.
  2. Bring to a boil for 1 minute and then remove from heat and stir in Biscoff and vanilla extract.
  3. Stir in oats and spoon into Cupcake liners in a cupcake pan, or on to a cookie sheet with parchment paper while mixture is still hot.
  4. Let cool at room temperature for 1 hour or refrigerate for 20 minutes.
